Carnival Rolls Out New Menus Fleetwide

Carnival Cruise Line is introducing new dinner menus for its dining rooms across its fleet, starting with Carnival Conquest. The new menus, developed in collaboration with Chief Culinary Officer Emeril Lagasse and Carnival chefs, aim to provide more variety and international flavors to the dining experience. Lagasse and the team tested over 60 new dishes on Carnival Dream, which received positive feedback from guests, prompting the rollout across the entire Carnival fleet.

The enhanced dining options will be introduced in a phased approach. Guests on Carnival Conquest in Miami will be the first to experience the new menus, followed by Carnival Horizon. Four more ships, including Carnival Sunrise, Carnival Vista, Carnival Radiance, and Mardi Gras, will implement the changes in the coming month. The introduction of new menu items will continue monthly on several ships based in Carnival’s U.S. homeports until early 2024. The Australia-based ships of Carnival will introduce the new menu items later in the following year.

The new menus will offer a wide range of dishes to cater to diverse tastes. One notable addition is the “Emeril Selects” section, which features dishes personally recommended by Emeril Lagasse. In addition to these new offerings, the dining room menus will also include a rotation of specialties from Carnival’s renowned specialty restaurants.

  • Crab and Shrimp Cake – this seafood appetizer is served over charred corn and apple slaw and remoulade sauce.
  • Beef Carpaccio – mascarpone-truffle cream flavors this Italian-inspired appetizer.
  • Coffee Glazed Roast Duck – Creole potato wedges accompany this delectable duck entrée.
  • BBQ Salmon – house-made Worcestershire sauce flavors this entrée that’s served with an Andouille potato hash and topped with fried onion rings.
