Holland America Has New Fresh Fish Program, Celebrity Chef

Holland America Line is launching a new global fresh fish program, which will offer guests fresh fish and ingredients native to various regions. The program will source 80 types of fresh fish from 60 ports around the world, and serve them on board in all restaurants within 48 hours of being caught.

The program also includes daily fresh fish specials and a planned expansion of the cruise line’s “Savor My Catch” excursion, where guests can catch fish that is then prepared and served by chefs on board.

World-renowned chef Masaharu Morimoto has been named Holland America Line’s “Fresh Fish Ambassador.” Morimoto is helping to curate dishes served in the ships’ Dining Rooms, and will also be opening a pop-up restaurant on board every ship called “Morimoto by Sea.”

“Morimoto by Sea” will offer guests a multi-course menu of artfully presented dishes and beverages, including sushi, Morimoto Fresh Tuna Pizza, Tempura Calamari Salad, and Pork Gyoza Dumpling. Main courses will include Crispy Fried Whole Market Fresh Fish, Ishiyaki Buri Bop, Shrimp Three Way “Morimoto Style,” Angry Lobster Pad Thai, Broiled Beef Tenderloin steak, and Japanese Vegetables Curry.

The global fresh fish program and “Morimoto by Sea” pop-up restaurant are both scheduled to launch in late 2023. Full details about the global fresh fish program can be found at https://www.hollandamerica.com/en/us/onboard-experiences/dining/fresh-fish.
