Seabourn has announced a series of significant enhancements to its culinary program, focusing on the transformation of Seabourn Square and The Colonnade. These updates are part of a broader fleetwide initiative to elevate the guest experience through regionally inspired menus and a focus on fresh, destination-driven ingredients. Under the leadership of President Mark Tamis, the brand is emphasizing the role of food in connecting travelers to the cultures and locations they visit.

Seabourn Square, often considered the center of the ship’s social life, has been redesigned as a sophisticated all-day café. The menu now features an expanded range of warm items, including Roman-style pizza, savory quiche, and classic toasted sandwiches such as the Monte Cristo and Croque Monsieur. A notable technical addition is the ability for guests to pre-order specialty coffees through the Seabourn Source app. These coffees are made with beans roasted on board and presented in a new signature style. Furthermore, the venue offers artisanal gelato produced by chefs who have trained at Italy’s Gelato University, ensuring an authentic product for guests. The service schedule is divided into a dedicated breakfast window and a comprehensive all-day menu available until early evening.
The Colonnade has also undergone a revitalization for its breakfast and lunch services. The space has been reimagined to be more dynamic and interactive, with an increased focus on live cooking stations. These stations include made-to-order omelets, a rotating fresh-fish station, and fresh-pressed juices. The menu is designed to change based on the ship’s current geographic location, incorporating local flavors and ingredients sourced directly from ports of call. On certain vessels, such as the Seabourn Encore and Seabourn Ovation, additional bistro-style seating has been added to accommodate this new dining approach.
These updates are being rolled out in phases, with the Colonnade enhancements already complete and the Seabourn Square updates expected to reach the entire fleet by mid-2026. Seabourn continues to offer an all-inclusive dining model across its various venues, maintaining its commitment to high-end service and culinary storytelling. These developments represent a strategic investment by Carnival Corporation to ensure Seabourn remains a leader in the ultra-luxury and expedition cruise sectors.
